How to Properly Clean a Restaurant Exhaust Fan

Restaurants often utilize commercial exhaust fans for ventilation. These fans remove air, odors and pollutants from the restaurant’s kitchen and other areas. They help create a safer environment for people who work and eat there. 

Before attempting to clean an exhaust fan, turn it off and unplug it. 

Cleaning the Exhaust Fan’s Filter

In particular, the fan’s filter (which catches dust and debris) will need attention. Filters are usually rectangular and made of metal mesh. You’re likely to locate them underneath the hood or microwave exhaust fan. Unhook levers or tabs that hold the filter in place. Pull out the dirty filter and put it in a soaking pan where it can be cleaned in a cleaning solution. Baking soda and dish soap can help dissolve grease, along with hot water. Cleaning the Hood, Blades and Oven

As for the rest of an exhaust fan, use a cleaning solution/degreaser to remove grease from the hood, fan blades, stove top and/or oven. Avoid spraying chemicals on items such as the fan blades. Rather, use a damp cloth with a cleaning solution to wipe components such as the blades. This way you won’t wet internal components or risk damage. 

Non-abrasive sponges and/or soft-bristled brushes can help scrub various components that have stubborn grease on them. Afterward, consider rinsing various components with hot water (and a cloth) to remove all the grease/residue. Allow the exhaust fan and its components to air dry. 

Maintaining a Restaurant Exhaust Fan

Sometimes exhaust fan belts may need to be tightened, especially if they’re slipping. There could be bearing wear. Cracked or brittle belts will need to be replaced. It’s also a good idea to make sure electrical connections are secure after you’ve cleaned the fan. Cords and wires shouldn’t be exposed to hot surfaces, grease or chemicals. The motor and fan shaft may need lubrication. Seals on the motor covers and air intakes should be checked.
